Red potatoes tend to be sweeter, (I dare say) More moist than the classic Russet, Baby Red is the perfect bite-size shape. I am all for leaving the skin on. Fun fact, the skin is packed with most of the nutrients that a potato provides. Also, peeling Baby Red sounds like a logistical nightmare.
I’ll admit that I’ve been avoiding the convenience air fryer for far too long at the risk of hitting my ego, but I’m in the right position. All of them are practical and very convenient. All I do is spray it with a little oil, season it with salt and pepper, and let it sit for 25 minutes or so.
After roasting the potatoes in the air fryer, add a simple dressing and you have the most delicious potatoes. Please let me know if you try it.
Roasted potatoes with lemon and dill
One of the simplest, but most flavorful side dishes. Cook in a fryer and toss with a simple dressing. This will surprise and delight.
Heat your air fryer (or oven) to 400 degrees. Spray potatoes in a bowl with oil and season with salt, pepper and garlic powder. Toss to coat evenly.
Place the potatoes in the heated air fryer and cook at 400 degrees for 25 minutes (on the air fryer setting).
While the potatoes are cooking, combine the dressing ingredients in a bowl and set aside.
Once the potatoes are done, let them sit at room temperature for 5 minutes before adding them to the dressing. Toss gently to coat, then leave potatoes at room temperature for an additional 10-20 minutes, tossing gently to coat the potatoes with the dressing.
Serve warm and enjoy!
